BBQ Quail with Honey Mustard Sauce

Ingredients

8 quail, remove the back bones

Roughly 60 ounces of chicken stock

5-6 small stems of thyme 2-4 inches in length

5-6 small stems of rosemary of the same size

Zest from 2 good size limes or 3 smaller ones

Teaspoon ground black pepper

Teaspoon sea salt

½ to ¾ cup Extra virgin olive oil

Dressing Ingredients

Tablespoon of sesame oil

Tablespoon of soy sauce

Tablespoon Dijon mustard

5-6 tablespoons of honey

Directions

Clean the quail thoroughly and dry with paper towels

Bring chicken stock to a boil

Put the quail into the boiling chicken stock and bring to a boil again for 2 to 3 minutes

Drain the stock and dry the quail and stuff with the herbs and the zest from the lime

Brush with the olive oil liberally several times over

Cook on the BBQ at medium heat for 8-10 minutes rotating it as it browns

Move the quail to a warm serving dish, at this time pour the dressing over the birds and let stand for a few minutes

Dressing instructions: Make sure to mix the dressing well before hand
